Their story

Two countries, two childhoods, one table

Solan is the brainchild of Chefs Agata Tomczak and Giorgio Santorsola. The duo’s restaurant experience together covers Michelin three-star kitchens in four countries, including Noma, Disfrutar, and Osteria Francescana. After their paths crossed for the first time at KOL in London, the two hit it off, and from a joint trip to Mexico in 2024, Solan was born.

Though their inspiration is drawn widely, some of Solan’s favourite ingredients hark back to their childhoods. Puglia, the sun-drenched ‘heel’ of Italy, and Kashubia, Poland’s Baltic lake country, are each famous for their food cultures – you’ll find references to both in Solan’s residency menu.

Here, they present ‘Italia, Polska’ - a strikingly original fusion that never sacrifices cohesion. Its sophisticated take on cosy traditions meeting modern flavours creates a menu as varied as it is harmonious.

This is the story of two countries with more in common than you might think.
